Southern Delight. Cake... ahhh, yes... cake. Red velvet cake is one of my favorites. Growing up cakes were basically yellow & devils food. Then flavors became popular, all kinds of flavors. Lemon, peach, strawberry, almond, cherry, apple, blueberry... pretty much an explosion of different flavored cakes & icings. Just like vanilla was my favorite simple flavor of ice cream despite the many choices... devils food with chocolate icing was my favorite in spite of the flurry of flavors available. So ideally the ultimate choice was devils food cake, chocolate icing, with a scoop of vanilla ice cream. Then, to rock my world, red velvet cake burst onto the dessert scene. Another choice that elevated both devils food cake & red velvet as two ultimate choices. The only other cake to even make my list was carrot cake, which was sweet enough to invoke headaches. Of course all are better with old faithful, vanilla ice cream. Here's some history about the most delicious red velvet cake.
