Visiting Maryland.... a little disappointing. Whatever the influence, be it prices or something else, its becoming increasingly harder to get a premium crab cake in Maryland. Perhaps Maryland is catering towards the tourists element, cheaper price, cheaper quality. Perhaps the restaurant climate is changing... as us over folks expect more, while younger folks don't expect the quality that we had in the past. As with everything, things change over time. The perception of what was once premium is being diluted by a current expectations of something less. Thus resulting in crab cakes made with less crab meat and more filler... And what is missing? ... jumbo lump crab meat, most times replaced with less expensive shreaded backfin... and in some terrible cases, they are using claw meat mixed in.
So... Even in Maryland,
we show restaurant waiters this photo and ask...
"does your crab cake look like this?" sadly most say no!
So we get something else... fish or shrimp.
