Location... They say location is everything. Very true in many instances. Growing up in Maryland we take steamed blue crabs crab dip, crab soup, and especially crab cakes very seriously. Any place beyond the cheaspeake bay and Maryland dont have a clue what crab cakes should be. Jumbo lump crab meat and only enough filler to hold it together.
Trying to find crab cakes outside of the area is a useless endourver. In the South they put all kinds of things in their so called crab cakes... red peppers, green peppers, tomato, celery, onion, and even corn. Really?
We always show this photo at potential restaurants that offer crab cakes. Do they look like this? No one... Absolutely no one ever says yes, having an astonished look on their face.
