Delight

Delight... the great joy if great food. Being from Maryland,  I grew up on lots of great local seafood. Steamed blue crabs, steamed shrimp, crab soup, and crab cakes. Just like anywhere else, great food differs even within your geographic area. So even in Maryland there are great crab cakes, some that are merely okay, and some that are throwaways. But on average, you stand a greater chance of getting a great crab cake in Maryland... and almost no chance of getting anything editable anywhere else. So here's your choices.
Veggie crab cake: OMG... REALLY?
Southern crab cake: 90% filler with shredded crab meat.

Now the good stuff... Maryland Crab Cakes. 95% jumbo lump crab meat with minimum filler just to hold it together... with spices.

And my favorite... broiled crab cakes... almost entirely jumbo lump crab meat.
So, to each his own. We traveled to may places through out the south... if the menu says "Maryland Crab Cakes"... DON'T YOU BELIEVE IT.
Short story:  While in Key West, the restaurant menu claimed Maryland crab cakes. So we asked the waiter... What's in those crab cakes. He returned from the kitchen and asked where we were from. We said Maryland.  He then said there are lots of other things on the menu that we would enjoy.  Needless to say, we ordered something else. Previous experiences with southern crab cakes was not too good. They contained lots of filler, red peppers, green peppers, onions, celery, tomatoes, sometimes even fake crab meat (fish), and sometimes even whole kernel corn. But I guess its all in what you were raised on.

This is just plain wrong on any level...
