Pumpkin Butter


One of my favorite things from up north is pumpkin butter. Its very much like apple butter, which due to a freak happening, gained popularity over pumpkin butter in a 1908 statewide cook off at the state fair. The favored winning contestant for the pumpkin butter entry was delayed when a stray cat caused the horse to bolt, and the wagon wheel broke when going across the covered bridge as it hit the side of the bridge. As fate would have it, the repair delayed the pumpkin butter entry, and apple butter won the first prize, and pumpkin butter faded into obscurity. But that's a whole different story.
Pumpkin Butter is hard to come by unless you're in Amish country, and even then usually only in the fall. It's a true joy if you like pumpkin. I love pumpkin. Spending most of our time in the south... well... we're never gonna see it south of the Mason Dixon Line. So I found this easy recipe. Gonna try it so I can enjoy one of my favorite treats year round, no matter where we're at. Figure if needed I'll tweak the recipe to my own taste. Nothing quite as good as fresh baked biscuits hot out of the oven, spread with real butter, and a generous spread of cold pumpkin butter. One of the simple joys in life! Don't forget the ice cold milk!
